Some variety would be good but I don’t want to re-stock my fridge and pantry full of new ingrediants for one picnic!

    We had a little picnic out on our boat this weekend, so I’ll tell you what I made.

    Wraps — Tortillas, garlic hummus, avocado, spinach, tomato and white mushrooms.

    Pasta salad — Mine was artichoke hearts and macaroni, with vegan ranch, olive oil, etc. It didn’t turn out too good, but there are plenty of yummy pasta salad recipes.

    Canteloupe and honeydew chunks.

    And our friends brought iced tea and potato chips.

    Beans and sweet onion salad!

    1 package Wacky Mac
    3/4 cup Cider Vinegar
    1 can (14.5oz) Green Beans drained
    1/2 cup Salad Oil
    1 can (14.5oz) Wax Beans drained
    2/3 cup Sugar
    1 can (14.5oz) Kidney beans drained
    1 1/2 cup Cherry tomatoes halved
    1 cup Sweet Onion chopped
    Salt Pepper to taste

    Instructions:

    Prepare Wacky Mac according to package directions, rinse with cool water. Meanwhile, combine drained beans and chopped onion in large bowl. In separate small bowl, combine cider vinegar and salad oil; slowly add in sugar to dissolve. Add drained Wacky Mac and vinegar mixture to beans. Add tomatoes and salt and pepper (optional), gently toss to combine. Makes 6 servings
