This may sounds silly but it’s really good.
Take 2 pieces of bread to make a sandwich and put some mustard on each piece of bread. Put a big heap of baby spinach leaves on it with a couple of pickles layered on top (I like sweet pickles, but you can use dill too.) That’s it! It’s tasty, low fat and healthy. You can mix it up too by adding some mushrooms layered on it or even a slice of tofu.
